Jack Daniel’s is often mistaken for a bourbon, but it actually classifies as Tennessee whiskey, and the Lincoln County Process is what truly sets it apart. While both bourbon and Tennessee whiskey must be made from at least 51% corn and aged in new, charred oak barrels, the Lincoln County Process is what makes Jack Daniel’s uniquely different. So, what is the Lincoln County Process? This step involves filtering the whiskey through charcoal—specifically sugar maple charcoal—before it goes into barrels for aging. This extra process, legally required for Tennessee whiskey, removes impurities and mellows the whiskey, giving Jack Daniel’s its signature smoothness. While bourbon and Tennessee whiskey are similar in many ways, it’s this charcoal mellowing process that distinguishes Jack Daniel’s and other Tennessee whiskeys. Additionally, bourbon can be made anywhere in the USA, but Tennessee whiskey must be made in Tennessee. Why Flowermore? Well, for one thing, we aren’t technically allowed to name this distillery. Secondly, upon sampling this cask, we were struck by how it trod such a fine line between those more floral characteristics typical of this make in the 1980s, and some much more old school and surprisingly beautiful elements that recalled more exotic examples from prior decades. All that, but also we needed a name! This cask represents everything we love about older Islay whiskies, and in particular that much fruitier, older style profile that is much more to do with Islay whisky styles from prior decades. Along with our 1992 Caol Ila that was Chapter Five of Whiskyland, this 1985 38 year old ‘Flowermore’ for Chapter Six represents two sides of the older style Islay single malt coin. As for guesses? New York's legalization of DTC spirits shipping took effect on November 16th. Here's some terminology for your tales 📚🍺 Ever heard of EBC? It's short for European Brewery Convention, a neat tool brewers use to measure beer colour. Low values mean lighter hues, like crisp pale ales, while higher values bring out the dark, rich tones of stouts and porters.
