I love listening to VinePair because most of their episode topics are what I ask myself as a reporter frequently: "does anyone care about this [insert trend here]?" one repeated point I hear from the hosts is that consumers don't care about spirits/brand/drink education. and I think I have to disagree, but add that in my experience and through my reporting, consumers *do* care about what they're eating and drinking — at various levels. I'm finding people are less interested in getting shitfaced (especially the older they get, especially with the cost of food and drink) and are more interested in mindful drinking, whether it's for health reasons, or budget reasons, or their interest in better understanding where their food/drink comes from, how it's made, the story behind the brand, etc. it doesn't mean that every consumer who comes to your bar wants you to give them a 20min speech about terroir in the wine being poured or why additive-free tequila matters, but engaging in conversation with people in service is how you can develop strong relationships that go beyond just that one time happy hour visit. just like there are different levels of service, there are different levels of education, and it does play a role in hospitality and it can help move a product.
