Publication Alert ! 🎉 I am happy to share that our research paper, "Enrichment of Peanut Butter Using Curcuma longa (Turmeric) Industrial Byproducts and Its Impact on Shelf Life," has been accepted for publication in Food Chemistry! 🍽️✨. https://lnkd.in/gi_K-ncQ. In this study, we delved into the innovative application of Curcuminoid Removed Turmeric Oleoresin (CRTO)—a byproduct of Curcuma longa—to significantly extend the shelf life of peanut butter. The results were promising: CRTO not only delayed rancidity but also enriched the peanut butter with valuable curcuminoids, presenting a natural and sustainable solution for food preservation. 🌱💚 Additionally, we explored the benefits of using Oxygen Scavenger Film (OSF) packaging, which demonstrated remarkable potential in maintaining product quality over time. A heartfelt thank you to my incredible team and collaborators for their unwavering support in making this research possible. We hope our findings will inspire further innovation in food science and technology! #FoodChemistry #FoodScience #Innovation #PeanutButter #CurcumaLonga #SustainableSolutions
