Allahamdulliha 🎓 I am Thrilled to announce that I have successfully completed my MS in Food Science and Technology! My thesis, topic was *"Development and Evaluation of Zinc-Fortified Yogurt for Enhanced Nutritional Benefits,"* was a deep dive into the intersection of nutritional science and food innovation. A significant aspect of my research involved the extraction of zinc minerals from chickpeas, which naturally contain zinc but often in forms that are less bioavailable. By applying advanced techniques to reduce phytates and enhance the bioavailability of zinc, I was able to successfully fortify yogurt with zinc derived from chickpeas. This approach not only boosts the nutritional value of yogurt but also leverages sustainable, plant-based sources for fortification. This journey has equipped me with advanced knowledge in food fortification, product development, and nutritional biochemistry, which I am eager to apply in the food industry. I'm particularly excited about opportunities to contribute to public health initiatives through the development of fortified foods that can address micronutrient deficiencies. I want to extend my deepest gratitude to my mentors, peers, and family who supported me throughout this challenging and rewarding experience.
