Good experience to have been at #EIT_Food‘s Next Bite conference the last two days. Very rich and content-deep conversations and presentations on how to address the Future of Food.
My key takeaways:
1) As Richard Zaltzman put it at the end, there is momentum with lots of inspiration and action. Corporates, start-ups, institutions and academics are working on a wide range of issues for today‘s food system and come up with innovative solutions. But there is a huge challenge in connecting the dots and scaling the solutions more broadly
2) Nature needs diversity, consumers need simplicity. It is important to move towards one regulatory framework to give clarity and transparency to all
3) Solutions need to solve real consumer problems. Many concepts and ideas are either rather abstract or not really picking up consumers where they are
4) Food is complicated and the challenge is multi-faceted. This often leads to one step forward and two steps back in discussions and in implementing solutions
5) Tech and data are the enablers, not the solution. It is about responsible and smart application on the right topics. Do rather fewer things, but those really well
6) Collaborating in the ecosystem is the key. But we are not there yet - by far. It needs high-impact joint projects to build the trust across participants

I’ve been waiting 9 months for this week since I started at IFT in October… IFT FIRST is officially here! Starting tomorrow morning, over 16,000 attendees will come together to address this year’s theme: Collaboration and Innovation: How can technology transform the food system?
Over the past year, the Institute of Food Technologists (IFT) team has been planning, creating, and building an amazing program and exhibit experience.
Looking for some recommendations, or not sure where to start? Here are some of the top things I’m looking forward to experiencing this year:
1. The exhibit hall ribbon cutting ceremony - 10 am on Monday! Fresh Chai sponsored by KSM-66 Ashwagandha will be served.
2. The IFT Innovation Lab - Wednesday 11 am - 2 pm. Select a consumer challenge and product type and work through the product development process. Play with new technologies and consider products as you navigate different challenges along the way.
3. The Business First, Taste of Science, and Fireside Chat Stages on the expo floor - All day Monday and Tuesday. Learn from experts on the applications of their ingredients and products right on the show floor.
4. The Braindate Lounge - all day Monday, Tuesday, and Wednesday. Interested in small group discussion on current challenges and topics? Suggest a topic you want to learn or share more about, or join an existing conversation. Find topics in the IFT FIRST app.
5. The Startup Pavilion and Pitch Competition - all day, Monday, Tuesday, and Wednesday with pitch sessions at 1 pm and 4 pm and the finale Wednesday at 11:00 am. See up and coming products and trends!
