Can you consume too much Vitamin A? 🍊 Yes, but it is difficult ... Allegedly, on a mission led by Australian explorer Sir Douglas Mawson as part of the Australasian Antarctic Expedition in 1911-1914 there was a case of death due to Hypervitaminosis A. The person was a vegetarian eating the liver of their sledge dogs that is naturally high in Vitamin A. For example, native folks still avoid eating livers of polar bears for that reason. However, eating liver from beef/pigs or carotene from vegetables is not problematic. Hypervitaminosis A is only a concern when overconsuming supplements. Nevertheless, eating too many carrots for a long time can turn your skin orange. However, the effects fade with time : ) The mechanism is not yet fully understood. This photo captures a moment in the middle of my first and only 100k run, my son nestled close as I stopped to nurse him. It resurfaced in my memories the other day—a reminder of what it means to nourish, both in strength and sacrifice. What a privilege it is to live in a place where nutrient-dense foods, protein, and health choices are within reach. The ability to make good milk for our babies, to fuel ourselves and our children, and even to choose something as wild as a 100k run, is a freedom I don’t take lightly. I just got off a call with a woman named Priyanka Kumari from the Sight and Life foundation - an international organization whose vision is “A malnutrition-free world, where science-led solutions and sustainable business models are amplified to not just uplift the world’s most vulnerable populations but enable them to be self-reliant”. I’ve been hoping to connect with this organization for years as they are leading the way in education around phytase, Phytic Acid, micronutrient deficiency and hidden hunger, and the importance of zinc in health. They have asked me to be one of four panelists in an upcoming international webinar on phytase and malnutrition, hosted jointly by the Bill & Melinda Gates Foundation and Sight and Life. The head of global nutrition from the Gates Foundation will be there, as well as a number of other scientists, companies and stakeholders in the space. This could be the opportunity of a lifetime, a chance to tell our story and connect with leaders in the space, a chance to have our product actually get to the people suffering from severe malnutrition. To address maternal child mortality, which was the original vision for Goodphyte and will remain my long term goal for this company - better health for those who don’t have access to nutritious food, or who eat high Phytase diets that deplete their bodies of essential nutrients like zinc and iron. We also have a call with Nestle Health Sciences as well as World Vision next week. It’s all coming together. Wish me strength as I take on this challenge. Here’s to making the good in Goodphyte stretch as far as we can.
