Recently, I came across a brand (I'll keep the name to myself), that proudly claimed: "No food scientists... Just grandma." Aside from the obvious, what really caught my attention is that the product included citric acid as an ingredient. I'm sure grandma was whipping pure citric acid in her kitchen every day 🙄. In the natural and organic industry, food scientists play a crucial role. By understanding the industry, and the science behind ingredients and process, food scientists can develop foods that are both natural and innovative, meeting the needs of today’s health-conscious consumers 🌱🪱🌍. Or do you want to look around, bring forth and pick up compounds that may not even be in a database list? Always depends on the application!
