The most bizarre interview experience I’ve ever had… Before I got into recruitment, I was a head chef. So, naturally, I needed to hire a Chef de Partie (similar supervisory level to a senior residential support worker, always experienced, usually with a Level 3 qualification). In hospitality, it’s common to do a short interview followed by a trial shift—about an hour tops. So, for this candidate, I invited him in for 8am & I decided to throw him into the deep end: the egg station during a busy breakfast service. All he had to do was keep up with poached, scrambled, and fried eggs. Simple enough, right? Well, we’re barely 20 minutes in and maybe 10-15 eggs down when he starts saying, “I’m tired... Are you not tired? This is really tiring.” I’m thinking, “Mate, we’re just getting started!” I professionally reminded him he could leave if it wasn’t the right fit, but he insisted on staying. Yet, the moaning about exhaustion just kept coming. Anyway, he finished the "shift" (barely) and I shook his hand, telling him I’d be in touch. Fast forward 2.5 hours... A customer is complaining about a strange noise coming from the toilets. The restaurant manager goes to see what was going on, calling out to the person inside—nothing. We ended up having to unlock the door. And there he was: the candidate, fast asleep on the toilet, in full chef whites, clutching his knife wrap like a comfort blanket. Did he start the next day? Absolutely... NOT! It was wild. But life would be boring without these experiences aye? Character building! Can you bring some curry to the interview? Yesterday, I was in a Thai restaurant, savoring an exquisite green curry, and it got me thinking about the hiring process for chefs. Is it easy? Do they have to create a menu instead of a portfolio? When considering hiring a new chef, one important question is: should candidates cook something during the interview? I also imagine questions like: When did you decide to become a chef? What is your signature dish? What is your favorite or least favorite dish to prepare? How do you describe your overall cooking philosophy? Name the three kitchen tools you can't do without. Why are you considering a new position? I love thinking about that. Depending on the job market at the time you’re looking for work, and how much time has passed since you last worked, this question can be asked to determine your motivation in finding a job. If you present yourself as highly skilled, motivated and experienced, lengthy periods of unemployment give hiring managers pause. Do not imply you are so picky that nothing will appeal to you. You can say you were doing some independent consulting and that the right full-time opportunity hadn't presented itself yet. If there are “red flags” that have cropped up before that are keeping you from getting the position you want, make sure you address them and eliminate them if possible.
