What will 2025 bring? Im excited! Can feel big things happening Cogs turning and business growing. Its not all sunshine and rainbows and things get hard. But one thing I have learnt in my short time growing my business is that consistency is key. We keep showing up. We make mistakes we own up and we rectify and readjust. Its tough when we lose a client but thankfully that is few and far between, What is great is the appreciation when we provide meals beyond expectations the repeat bookings year on year that fill our calendar and the amazing businesses we get to work with. 2025 will see my new venture SMOKE BBQ based inside Lets Go Hydro, Carryduff, continue to grown and establish itself as the go to BBQ spot in Northern Ireland we have a plan, we have goals and the team are hyper-focused on making this happen! We are creating an experience that seldom view other restaurants have! Cousins Catering is being redefined and growing into a higher end catering offering with the mobile catering happening at bigger festivals, excited to start a higher end of catering within the corporate model on this! DS Catering continues to serve as a casual cafe at the lets go hydro resort and has a busy season ahead come April. But I sit back and reflect on my 3 years since leaving the military with nothing, no pension, no payout, no discharge just an unfaltering and sometimes ignorant belief that I can make this work and at times that I had to make it work! Showing up every single day, building a team around me that are as strong and if not stronger, making hard decisions and making them quickly has seen a 10year goal propel and come to fruition within 4 years. Luck plays a part but then again dont we all make our own luck? To anyone thinking of starting on their own, any of my friends getting to the end of their time and are worried of what comes next, its all there for the taking, but it doesnt come easy and I have learnt the most expensive thing in all of this is TIME! and you have to put in the time beyond what is reasonably expected beyond what a normal week looks like and sacrifice the most precious thing we have TIME - Do it. No one will do it for you, attack it and want it, own your mistakes and build constantly and consistently and its all there for you.

Today I found myself in Salzburg, Austria. Sitting for lunch in the oldest restaurant in the world, in operation since the year 803! Yes. You read that right. Operating since 803. It got me thinking and asking “how does one maintain a successful business built for longevity?” Obviously, one is flexibility. Being able to grow and adapt over generations and changing times to suit the current needs of your consumer. Second is not compromising your integrity as you navigate these changes. At lastly, you’re only as good as your People and Product. This is the only attribute I could attest to first hand and it was abundantly clear that these are very solid foundations of their business. Nothing groundbreaking. But always great reminder. As I look at my travel agency I realize where I am lacking and look forward to really looking down the long path, not the immediate one. Anticipating the future needs of my clients and being able to be flexible, while maintaining my integrity in the products that I offer. Trimming down suppliers that are not reflecting these values and delivering my guests the absolute best. It’s funny that a simple lunch could have such an impact.
