Their recent publication, "Non-Conventional Brewers’ Spent Grains, an Alternative Raw Material in Bread-Making," explores how oats- and buckwheat-based Brewers' Spent Grains (BSGs) can transform bread-making into a more sustainable practice. 🔑 Key Findings: 1️⃣ Non-conventional Brewers' Spent Grains (BSGs), based on oats or buckwheat additions, have the potential to be high-upcycled in new bread assortments. 2️⃣ Technological, buckwheat-based BSG was more convenient than oats-based BSG as an alternative ingredient in bread-making. 3️⃣ Lactic acid fermentation applied to the BSGs is more beneficial, especially from a sensory standpoint, than non-fermented BSGs for both oats- and buckwheat BSGs.   4️⃣ Using non-conventional BSGs based on oats and buckwheat has potential for the bakery regarding consumer acceptability. 🎯 This research exemplifies the FULLRECO4US COST Action’s mission to promote resource efficiency and innovation in food systems.
