Our latest study, "Impact of the stepwise implementation of INFOGEST semi-dynamic conditions on in vitro starch and protein digestion" reveals how more complex in vitro digestion models affect starch and protein digestion patterns: ✅ The pH profile determined gastric protein digestion ✅ Saliva(ry amylase) importantly impacted starch digestion ✅ Different gastric aliquots (obtained upon stepwise gastric emptying) generated distinct digestion patterns. 🙏 Special thanks to co-authors Prof. Sarah Verkempinck and Prof. Tara Grauwet, and to our funders, Research Foundation Flanders - FWO and the KU Leuven research funds. Are natural and synthetic structures equivalent? There has been a lot of research and various opinions about the differences between pure vitamins from fruits and vitamins from pills. Similarly to discussions about coffee potentially causing cancer, the results vary depending on the standards or goals being targeted.
