Celebrating #InternationalRecyclingDay here in #LasTorresPatagonia. Did you know that our bar is an icon of sustainability in the region? The glassware found in Bar Pionero is made from recycled bottles, which have been crafted by bar staff and groups of volunteers and university interns. Each bottle is cut, sanded, and then transformed into glassware. Sustainable mixology reuses 100% of the natural resources used for the production, preparation and presentation of drinks. Thanks to this innovative approach, it not only reduces the bar’s carbon footprint by 80%, but also incorporates time-honored techniques. The ingredients used in our drinks come from our organic garden, or from the wild lands of Patagonia. This gives our drinks unique flavors that can only be found in this region of the world. The Hotel Las Torres head bartender, Federico Gil, explains that the Andiperla is named after a small winged insect known as the Patagonian plecopteran. This small animal has the peculiar ability to make glaciers its habitat, which is why it is also known as the Patagonian Dragon. So what makes the Andiperla zero waste? This unique drink is served in an edible glass, which is made of a cookie crafted with dehydrated lemon peel shavings, and coated with an inner layer of white chocolate that makes it impermeable when served. My visit to Fine Food Australia in Melbourne this week reinforced that #sustainability is a core value and the food we serve can help tell a story. The Unilever Food Solutions trends workshop, featuring Chef Julian Cincotta of Butter Sydney, was my pick of the industry talks. Butter’s approach to "street meets luxury" cuisine and a commitment to sustainability was inspiring. With a staggering 65% of Australia's hospitality waste ending up in landfills, Butter's initiative to break down packaging costs for consumers and promote reusable options is a game-changer. The creation of Betizen* - a fresh take on sustainable packaging and the instigation of Sydney HospoDECLARE shows that small steps can have a ripple effect, inspiring others to embrace sustainable practices. Curating #events in an era of net-zero targets means #foodsustainability is a key consideration. What is the kitchen at your upcoming venue doing to drive a low-waste, sustainable food service? How can you showcase these efforts as part of the overall event experience? These questions should be an integral part of your event sustainability plan. - Communicate your sustainability efforts to attendees- showcase locally sourced ingredients, and waste reduction initiatives. - Collaborate with caterers and venues that show a commitment to sustainability. - Consider the entire lifecycle of your food, minimising waste, supporting local producers, and consider how it is served and consumed.
