A question I get all the time as a somm: “How do you know when to decant a wine?” I’ll keep it brief on how I decide. Steps: 1. Pour 1-2oz of the wine in question into a glass 2. See, swirl, smell, sip 3. Evaluate the flavor, and how “austere” or tightly wound the flavors are 4. Leave the glass for 10-15 minutes, then repeat step 2 and 3. If it’s improving in flavor, balance, or finish, decanting may be in order Most wines may only need 30min to an hour. Keep in mind that decanting a very old wine is sometimes just to keep sediment out of your glass rather than to open up the wine and some old wines may “fall apart” when decanting. Personal tip: I like to use a merlot style decanter for much of my wines. I find them easier to clean and easier to pour with. There may be “more appropriate” shapes and styles but that’s my preference. Cheers! 🍷 #sommelier #winetips #winecountry
