Our Millet Culinary Workshop in Bhopal was a heartwarming and flavourful affair hosted at the ever-inviting Cafe Amado! Whether seasoned with millets or new to the grain, attendees enthusiastically embraced the experience, discovering just how versatile and delicious millets can be. The day began with a vibrant salad demonstration by our very own Thomas Zacharias, showcasing foxtail, kodo, and little millet paired with a roasted tomato dressing and garlic yoghurt. Topped with pickled tendli, tender red amaranth, and charred corn kernels, the salad celebrated local produce and sustainable cooking. Chef Meenal Rai Shejwar of Cafe Amado followed with her innovative take on a classic favourite: Kodo Millet Poha. Crispy choulai, sev, and local greens added a nutritious twist, blending tradition with creativity. For the main course, Sayani Sengupta, our Millet Cooking Lab lead, brought the flavours of Bhopal alive with her Proso Millet and Yam Chaat—an ode to garadu chaats and galouti kebabs. This inventive dish demonstrated how millets can elevate even traditional, iconic recipes. The day ended sweetly with Sayani’s indulgent Ragi Chhena Malpua, paired with a dried Mahua Flower Rabdi. It was incredibly gratifying to engage with Locavores in Bhopal and witness their active participation in discussions about bringing these heritage grains back to our plates in creative and imaginative ways. We also created a Millet Cookbook as a parting gift for attendees.
