Happy Healthy Holidays! Enjoy my recipe below for Healthy Holiday Pumpkin Treats. They are great during the holidays, but can be used as energy balls all year long. I have made these for attendees of my Holiday Wellbeing and Healthier Holiday Treats In-Person and Virtual programs. I only have a few December dates left if you are interested in booking one of these programs for your groups. Enjoy the season! Healthy Holiday Pumpkin Treats Ingredients: 1.25 cups old-fashioned oats 2 T flaxseed 2 T chia seeds 1 tsp pumpkin pie spice or ( ½ tsp cinnamon, ¼ tsp ginger, 1/8 tsp nutmeg, 1/8 tsp cloves) 1/8 tsp of sea salt ½ cup peanut butter ¼ cup pumpkin puree ¼ cup maple syrup 1 tsp vanilla extract ¼ cup mini chocolate chips (optional) Directions: In a mixer, blend the ingredients together except for the chocolate chips. If the mixture is not blending, add a little water or more pumpkin. Roll into balls the size of 1-2 tablespoons. Optional: press some chocolate chips into the balls. Store in airtight container in refrigerator for 3-4 days or in freezer for up to 2 months. #healthyholidaytreats #healthypumpkinrecipes
