Had an amazing time at the Denver R365 Restaurant Transformation tour conference! Most importantly, I was able to see a lot of friends in person, and meet a bunch of people who are shaking up the hospitality space. The learning experience, especially during the breakout sessions, was incredible. R365 has some amazing tools, and the buzz of the conference (IMO, as someone obsessed with cost control :)) was all about AVT (Actual vs Theoretical) analysis. This type of analysis translates to points of COGS and can potentially save MASSIVE dollars by identifying cost discrepancies. I always say you have to be able to set targets, measure, then pivot to maximize profit.
