Coming back from the International Dairy Deli & Bakery Show in Houston, thought I'd share some food for thought (pun intended). 1. M&A activity continues to tick upwards in the bakery & confection sector. 2. Volume will continue to scale at large private label bakeries and co-manufacturers. - Evidenced by Roark’s purchase of Subway (closed Q2 2024) and subsequent increase in number of restaurants & menu addition’s of ‘Sidekicks’ which include Footlong Cookies & Churros. - Fast Food Breakfast wars driving foot traffic and volume as well; McDonald’s remains King at roughly 35% of the breakfast wallet share, but competitors such as Wendys and Burger King are offering promotions and new products to entice the morning appetite. 3. Product Innovation & Partnerships: Several of the below products and trends were evidenced by trusted, large CPG partnerships (ie – Sabra Dipping Company’s & McCormick & Company's Frank’s Buffalo Hummus and Stubb’s BBQ Hummus) along with middle market entities (Van Holten's Pickles & Impact Confections, Inc. Warheads Pickle). -Sriracha-infused brioche buns & onion rolls were commonplace as bakers seek to enhance the burger and overall dining experience. -Sweet flavor profiles such as barbeque and chocolate continue to be blended into the dips and spreads sector; ie – hummus, cannoli chips. Don’t forget the infamous dill-pickle flavor that was rampant across spreads, condiments, sauces, and bakery items. -To entice the ever-curious consumer and often times younger, ‘Gen Z’ demographic, sour & experimental flavors are gaining ground; ie – Van Holten’s Warheads-flavored pickle -Allergen-friendly and inclusive specialty products such as gluten-free and vegan pastries/breads were commonplace. Institutional and strategics continue to take notice; Rubicon Bakers, LLC’s acquisition of Lucky Spoon Bakery is reflective. -One company developed an Egg-based yogurt; Key Lime and Madagascar vanilla flavors offer a protein-packed, dairy-free alternative for health-conscious consumers.

Preparation Time: 20 minutes Cooking Time: 10 minutes Resting Time: 5 minutes Total Time: 35 minutes Serving: Makes 4 burgers Ingredients: - 1 lb ground lamb or beef - 2 garlic cloves, minced - 1 small red onion, finely chopped - 2 teaspoons ground cumin - 1 teaspoon ground coriander - 1/4 teaspoon cayenne pepper (adjust for heat preference) - 2 tablespoons fresh parsley, chopped - 1 tablespoon harissa paste - Salt and pepper, to taste - 4 hamburger buns, toasted - Toppings: lettuce, tomato slices, red onion rings - Optional: tzatziki or a yogurt-based sauce for serving Method: - In a large bowl, combine the ground meat, garlic, red onion, cumin, coriander, cayenne pepper, parsley, harissa paste, salt, and pepper. Mix until just combined—be careful not to overmix to keep the burgers juicy. - Divide the mixture into 4 equal portions and shape each into a burger patty. Create a slight indent in the center of each patty with your thumb to help them cook evenly. - Heat a grill or grill pan over medium-high heat. Cook the patties for about 5 minutes on each side or until they reach your desired level of doneness. - Let the burgers rest for 5 minutes after cooking. This helps redistribute the juices throughout the burger. - Assemble the burgers on the toasted buns with your choice of lettuce, tomato, onion, and a dollop of tzatziki or yogurt-based sauce if using.
