Chances are you've heard of Austin's El Arroyo, but perhaps not because you've dined there... Ellis Winstanley and his wife Paige acquired the restaurant in 2012 with aspirations to grow its footprint, but the industry was experiencing significant disruption following the Great Recession. So, they focused instead on growing brand awareness through its marquee sign, changing messages every day and ensuring they were funny, humble and “connective.” The strategy worked beyond their expectations and now El Arroyo has a massive retail presence, with nearly 350 SKUs, as well as a cult following spanning the globe. This success has allowed the couple to go back to their initial focus of growing the restaurant. They plan to have six El Arroyo locations open in Texas by 2026. 6 years ago, I opened my first store, from scratch. Bernardo Neto took a chance on me and hired me to be on the team that rebranded The Monte Carlo into what is now Park MGM. That decision to move into the Casino Hospitality industry was the best career choice I’ve made yet, although scary at first! I had no idea what I was getting myself into, but decided to take the leap of faith and trust in my own capabilities. Since, I have experienced and learned more than I would have if I stayed on the ‘traditional’ retail pathways. I always explain the Hospitality industry as a ‘college’ so many learning opportunities to be exposed to; if you do it right, with the right support, you grow into a well versed leader. (Still growing myself.) Trust in who you are, and don’t let fear of the unknown stop you from your own potential. Cheers to 6 years later, two companies, two states and 16 store concepts opened from scratch (so far) :) and the teams who’ve helped make it happen.
