We didn’t build this one, but I’ve built quite a few over the years. When they are unconventional like this one, a lot of care has to go into the structural part of the door. For instance, having a flat and solid interior core is critical, but also making sure that whatever facing goes on one side is the same on the other in terms of thickness, dryness and grain. Problems start to arise with flat grain one side and vertical on the other. Additionally, make sure the door is sealed on all six sides before exposing to the elements

It was one year to the day that Potter Jane Distilling Co. broke ground on their new distillery. This field in Springfield, about 18 miles from Bardstown, the Bourbon Capital of the World, has come a long way in a short period of time. Founders Denny Potter and Jane Bowie (both formerly of Maker's Mark) welcomed the arrival and installation of their new 39' tall Vendome Copper & Brass Works Inc. copper column still. What were you doing in 1991? For Cornerstone Cellars, Napa Valley, it was the beginning of our story, nestled high above the fog line in the Howell Mountain AVA. After a perchance meeting with Randy Dunn and the opportunity to acquire extra tonnage of Cab grapes, Cornerstone Cellars was born. We recently led a group tasting of our 1990's vintage Howell Mountain Cabernets, hosted by our founder/owner Mike Dragutsky, winemaker Kari Auringer, and one of the original architects of the Howell Mountain AVA, Mike Beatty. The wines all, perhaps not so surprisingly, continued to show character and complexity beyond their maturity. What is the Howell Mountain AVA? Certified in 1983, this region is merely 1,500 acres of vines planted between 1,400 and 2,500 feet above sea level at the northeastern end of the Napa Valley. Soil type is mostly decomposed volcanic ash and red clay, allowing for superior drainage. Although Cabernet is now king for the region, Zinfandel was the most widely planted grape originally.

The grain of oak wood, a crucial aspect in cooperage, is influenced by both the botanical and geographical origins of the tree. In cooperage, grain specifically refers to the size and regularity of a tree's annual growth rings—the very rings you see when you look at a cross-section of a tree trunk. The spring wood, formed during wetter months, has wide vessels because the tree needs to transport more water to support rapid growth as it forms buds and leaves. In contrast, the summer wood, formed during drier months, has fewer and smaller vessels because less water is available, and the tree requires less sap. Moreover, during summer, photosynthesis leads to the synthesis of sugars and polysaccharides, which are stored in the tree’s fibers, making the summer wood denser. Together, these layers form the annual growth rings that define the grain of the oak. The grain of the wood is characterized based on the size and regularity of these annual growth rings. Oak is classified into fine-grain, medium-grain, or coarse-grain categories depending on how many growth rings are present per centimeter of wood. Fine-grain oak has five or more rings per centimeter, medium-grain has three to four rings, and coarse-grain has two or fewer rings. The grain size is influenced by both the species of oak and the growing conditions, such as soil type and climate, which affect the rate of tree growth. For example, Quercus petraea, often grown in the Allier region of France, is known for its particularly fine grain due to the slower growth rate in that region, while Quercus robur tends to have a coarser grain. Interestingly, cooperages sometimes classify their wood not by the tree's geographical origin but by the size of its grain—meaning an "Allier type" cask may not come from the Allier forest, but it will have the specific grain size that characterizes the region. This practice helps ensure that the wood used in barrel-making has the desired characteristics, regardless of where the tree was grown. Understanding the grain is key to selecting the right wood for wine barrels, ultimately impacting the flavor and quality of the wine. How do we install 240,000 t-posts on a new vineyard so fast? “Custom” implements and old fashioned hard work! Pedro has this awesome custom post pusher that has gauge legs to adjust for different heights and snaps right onto a compact Kubota front loader. As the crew stands up the posts the tractor operator follows behind to push them in to the pre-set depth. A hand crew follows after we’ve thoroughly watered and posts have settled in to adjust any outliers (posts that are tall/‘proud’) by hand to insure a nice smooth flow to our top cordon wire for the final install. This smooth trellis wire flow helps during our operational phase by making mechanized pruning much easier. WHY IS ALL THAT EVEN IMPORTANT TO OUR WINERY CUSTOMERS?!?! Long term mechanization of vineyard tasks helps us improve fruit quality and consistency while bringing the cost for the fruit much lower than your typical vineyard operation. Typically we see 25%-50% lower fruit costs for the same quality levels for our clients. This can be a crucial component to increase your margin (profit per bottle sold), especially if your winery has seen increasing costs in other areas or decreased sales volumes (I’m looking at you, premium-cost tier TX wineries!). If you need any proof of concept, just look to our customers with 9+ medals and dozens of premium SKUs for the tasting that absolutely kill it in the $25-$80/bottle range that used fruit that cost in the $1,200-$2,200/ton price range! 🍇 🍇 🍇 🍷 🍷 🍷 🏅 🏅 🏅 I’ll keep bringing more planting media as we go!
