Nepal’s cocktail culture is undeniably flourishing. Traditionally known for drinking spirits neat, the market is now witnessing a creative renaissance, with bartenders pushing the envelope to craft inventive and delicious cocktails. Ajay Nayyar from Tulleeho had the privilege of judging the Himalayan Bartending Competition in Nepal, an event that illuminated a unique and dynamic side of Nepal’s evolving cocktail scene. His experience was a fascinating blend of tradition and innovation, where talented bartenders and mixologists paid homage to their “culture” while crafting extraordinary drinks. One of the competition’s key challenges was for participants to create a cocktail using Aila, a traditional rice-based spirit deeply rooted in Nepalese culture. (Aila is not yet commercially produced in Nepal, but it can be purchased in Newari restaurants that serve Newa cuisine. CNN has called aila one of the "50 most delicious drinks in the world). The second challenge revolved around incorporating a brand from the William Grants portfolio, one of the event’s co-sponsors and creating a contemporary cocktail. A particularly notable moment was when Rohan Shrestha, the eventual winner, was awarded a cash prize of 50,000 rupees. What made this gesture so significant was that the prize wasn’t handed over by a general manager or CEO but by a municipal collector. This gesture symbolized the local government’s direct involvement and recognition of the burgeoning cocktail scene. No matter how refined Provence’s flavors are or how deeply rooted its cuisine is in French culture, Gaziantep tells a different story—a tale of a centuries-old gastronomic heritage transformed into a model of economic development. Gaziantep’s Gastronomy Festival, growing in stature each year, feeds more than just our appetites; it nourishes the city’s economic structure. Beyond Gastronomy The first word that may come to mind when thinking of Gaziantep is “food.” Its cuisine is now recognized worldwide. Yet, the city’s success doesn’t end with its culinary achievements. Gaziantep has crafted an economic dynamism centered around its gastronomic prowess. The Gaziantep Gastronomy Festival has become one of the city’s most significant cultural and economic events, expanding each year thanks to both domestic and international participants. During the festival, hotels brim with guests, restaurants close their reservation books weeks in advance, and local producers and artisans see their sales double. However, most importantly, this festival demonstrates that Gaziantep’s development model extends beyond tourism and cuisine. “Washoku: Japan's Culinary Heritage Recognized by UNESCO” In December 2013, UNESCO designated washoku, Japan's traditional cuisine, as an intangible cultural heritage, prompting the Japanese government to intensify its preservation efforts. Washoku's recognition by UNESCO is attributed to four key characteristics. Firstly, it emphasizes respect for fresh, diverse ingredients. Secondly, it offers a balanced and nutritious diet. Thirdly, washoku is appreciated for its representation of natural beauty. Lastly, it maintains a deep connection with seasonal and annual events. Since this acknowledgment, there has been a surge in the global demand for traditional Japanese cuisine. From 2013 to 2023, the number of Japanese restaurants abroad skyrocketed from approximately 55,000 to 187,000. This growing interest has led many foreign chefs to travel to Japan to master authentic culinary techniques, service skills, and the essence of Japanese hospitality, which they then apply in their home countries. To support this educational exchange, the Japanese government has been funding a training program for chefs since 2016. A certification system has been established, recognizing foreign chefs who achieve a certain level of proficiency in washoku.
