There are several products, where particularly the bitter taste of the components is nullified by CDs. But how can we test in the making if CDs will be useful for this? In this paper, Nicole Jaffrezic Renault and colleagues test association contants between caffeic acid (a very bitter additive) and various CDs using a novel micro-conductometric sensor. Caffeic acid (CA), a member of the hydroxycinnamic acid family, has garnered attention in the medical community for its wide-ranging health benefits. However, its application in pharmaceutical and nutraceutical products has been hampered by its distinctly bitter taste, which deters many consumers. Results suggest that HP-β-CD is highly effective in masking CA's bitterness, thereby significantly enhancing its palatability. https://lnkd.in/dveRDNyG #bitterness #tastemasking #palatability #taste
