I don't know about the rest of you working in ag, but I spend a decent amount of time thinking about how the dawn of agriculture changed our food system. Whatever your view of it, it changed a lot about our bodies, our landscapes, and the plants we (choose to) interact with. Well, I think refrigeration might give the agriculture a run for its money on the extent to which it radically changed our bodies, our landscapes, and the plants we interact with. My podcast guest (last week) Nicola Twilley explores that and so much more with her book 'Frostbite'. Many of us work in industries dependent on the cold chain in one way or another. We might be working to shorten the distance our food travels but we still depend on the domestication of cold (which truly only happened 100-150 years ago, compared to fire's 1 million) to preserve our meat and produce. There is 5.5 billion cubic feet of cold warehouse space in America alone (and rapidly growing) - enough for each person in the US to have 15 cubic feet of cold all to themselves. The cold chain changed our relationship to food and created a much bigger global market, which in turn, changed our bodies and ecosystems. We began to favor foods for the refrigerability (a word I think I made up). We selected for fruits and vegetables' ability to travel in cold storage, decreasing the diversity of our diets and landscapes. Not to mention sacrificing flavor and nutrient density for cold storage stability. As Nicola puts it: “In short, our food system is frostbitten: it has been injured by its exposure to cold. Part of the reason for that is that refrigeration was implemented, for the most part, in order to optimize markets rather than human and environmental health.” This has been an incredible topic to explore as someone intimately familiar with the use of cold. We have quantity of production conquered. Now, will the marketplace prioritize flavor and nutrient density over the temptation of "cheap food?" Will consumers pay a premium for better versus inexpensive? I believe they will, at least at the economic top half of the customer base. Most in Ag think it's only about being low price.
