# 08 + # 09 are here! We're so happy to launch two experimental malts in collaboration with St. George Spirits, a celebrated craft distillery based in the vibrant Bay Area of San Francisco. These bottlings mark a significant milestone in our mission to highlight the diversity in approach to whisky production across the globe. The new releases, launched for our 1st birthday (we are ONE!) celebrate both the art of distillation and the creative world of distilled beer, pushing the boundaries of what ‘whiskey’ can be. Cask # 08 began life as a sage-infused IPA from a historic Californian brewery, before being matured in a cask that previously contained Bourbon, Reposado Tequila, and a Californian Ale. A really complex oddity! Floral, herbaceous and fruity all in one, expect notes of dried chamomile, apricot jam on toasted brioche and Rolo’s. 1 of 224 bottles — 54%abv Cask # 09 celebrates the many parallels between brewing and distilling. A true hybrid between the two, this malt began as a coffee stout made from 100% malted barley, before being distilled and aged in a new American Oak barrel. Spicy, green, and smelling like the waft you get from walking past your favourite coffee shop, sip neat, with a drop of water or pair with a coffee stout for a winning combo. 1 of 315 bottles — 52.5%abv ENJOY! 🥃
