Leek facts 🔗 A leek is a vegetable, a cultivar of Allium ampeloprasum, the broadleaf wild leek 🔗 Raw leek (bulb and lower leaves) is 83% water, 14% carbohydrates, 1% protein, and contains negligible fat 🔗 Archaeological sites in ancient Egypt, as well as wall carvings and drawings, indicate that the leek was a part of the Egyptian diet from at least the second millennium 🔗 The 1st century CE cookbook Apicius contains four recipes involving leeks. 🔗 Leeks are good for vitamin C, E & K

Today is World Bee Day, poignant as a third of world food production depends on hardworking bees battling climate change, pesticides and disease. Despite these challenges, they pollinate our crops and produce delicious honey. Beware, not all honey is created equal. Mass-market honey, the kind typically sold by supermarkets, is pasteurised, highly processed and blended. In contrast, the stuff sold by beekeepers like our local beekeeper, Elisabeth at @oakdalebees, is straight from the hive and separated from the comb by spinning or gentle pressing. Crucially, craft producers do not allow their honey to get above hive temperature (36°C /97°F), so what they produce is called "raw honey" (not pasteurised). Here I discuss the False Chanterelle mushroom, which can be mistaken for the true Chanterelle. While the False Chanterelle is reportedly edible and indeed eaten in some cultures, I personally advise against eating it due to credible reports of some people experiencing digestive issues and even alarming hallucinations from eating it! The true Chanterelle on the other hand is simply a delicious gourmet mushroom with a flavour that’s unique amongst wild mushrooms. I highlight the key differences between “true” Chanterelles and the False Chanterelle, to help ensure when foraging for Chanterelles you can identify and therefore avoid the False Chanterelle! I also mention the poisonous jack-o'-lantern mushroom, which is rare in the UK but also worth knowing about if inexperienced and foraging for Chanterelles. #wildfood #mushroom #fungi #foraging #connecttonature

If you like cooking shows, like MasterChef, you must have seen these fascinating fruits called finger limes (𝘊𝘪𝘵𝘳𝘶𝘴 𝘢𝘶𝘴𝘵𝘳𝘢𝘭𝘢𝘴𝘪𝘤𝘢). They are also called caviar limes because the inside has globular, pearl-like vesicles that resemble the appearance of caviar.
