“The big sea of complexity” #Orterre episode is out 📣 This time, we travel to the heart of the #Mediterranean sea to meet our friend Cesar Vega -author of “The Kitchen as Laboratory: Reflections on the Science of Food and Cooking” and experienced manager in big #CPGs- and discuss the role that the F&B industry can -and want to- play when it comes to impactful choices. “The more disruptive we are with food, the less people want to try it, as disruption typically entails throwing traditions away”: thats the starting point of Cesar’s thinking. However, the problem with discussing #food is that we can't just toss the baby out with the bathwater; we still need to consider our #memories, #history, #culture, and yes,#epigenetics.
