Our working paper in collaboration with Jan M. Bauer and Lucia Reisch, as part of the BEACON Behavioural Insights for a Circular Society project funded by the Novo Nordisk Foundation is now available. It's about a large field experiment, where we provided participants with carbon footprint information and discount vouchers to promote more sustainable food choices at a festival. Our findings reveal that providing carbon footprint information about main ingredients alone did not significantly affect food choices. However, offering discount vouchers resulted in a notable increase in the selection of vegetarian options, demonstrating once again the power of financial incentives in driving sustainable behavior. Interestingly, we observe that individuals who are not interested in vegetarian options also tend to ignore the carbon emission information, indicating a gap in engagement with sustainability efforts. Finally, while vouchers successfully shifted behavior, the cost of the associated emission reductions was prohibitively high—over $2,000 per ton of CO2e—suggesting that such approaches may not be cost-effective in the long run. Alternative strategies, such as limiting the number of high carbon footprint food options to reduce emissions, might be more efficient. https://lnkd.in/dy-UhePf
