Sea urchin roe is considered a delicacy, but when produced in captivity, its marketable qualities, such as color and taste, require improvement to meet consumer expectations. At CIIMAR, Universidade do Porto, we have developed innovative diets for Paracentrotus lividus (the purple sea urchin), incorporating 1.5% Dunaliella salina as a supplementt, identifying it as the best choice for enhancing roe color while ensuring efficient feed conversion, a critical factor in aquaculture. To maximize the retention of carotenoids, essential for achieving vibrant roe color, we employed advanced feed manufacturing techniques, including cold extrusion and soft drying, which significantly reduced nutrient losses compared to traditional hot extrusion and drying methods.
