Among them, 3,938 were awarded 1 star; 1,386 received 2 stars and 266 were granted the highest, 3-star status. How many of those coveted 3-stars went to products classified as vegan? One. 🎄🌭 At Teknologisk Institut, we're embracing the holiday spirit by reimagining a classic favorite: the frankfurter. As part of our commitment to sustainable food solutions, we've been exploring ways to optimise sausage recipes by incorporating more vegetables. Our latest research focused on replacing a portion of meat with chickpeas (known for their use in falafel) and substituting most of the liquid content with vegetables. The results? 🌿 Delicious frankfurters that not only contribute to a greener future but also tempt the taste buds. Yesterday our many patient colleagues participated in a blind taste test, and the findings were fascinating: - Most participants found it challenging to distinguish between the three recipes - The clear favorite was the sausage containing 70% meat and 30% chickpeas 🎁🌍 This result demonstrates that we can create more sustainable food options without compromising on taste or texture. I had this conversation with a podcast host just the other day. It may not seem obvious, but the #Hospitality industry has a direct impact on consumer eating trends and choices - going well beyond the restaurant experience. Chefs are now akin to artists, innovators and storytellers through their menus and plates 🍽️ . And, at no other time in history have our choices been influenced so heavily by social media, marketing and peer influence. 📣 Their role in the bigger #sustainability story comes with the opportunity to help improve our food system on a global scale and positively impact people and the environment. 🌍 #Chefs, we need you to take bold steps. 👣
Is it up to the customer to make sustainable food choices? It’s businesses, not customers, that shape how we eat. The options on menus, what’s stocked on shelves and how food is marketed all come down to industry decisions — so real change starts there.
