We make just too many recipes using coconut in grated , paste form.This is used to prepare stuffings, curries, to derive thick coconut cream and also blending it with a sour berry to make an digestive drink. We also use coconut shells to make ladles and the husk is used to make very tight durable ropes. Coconut tree 🌴 as well as the fruit is a versatile ingredient. We make special steamed dumplings which has the coating of rice flour dough stuffing made of fresh grated coconut ,jaggery, hint of saffron and laced with nutmeg. The dumplings are steamed and served with Ghee. They are called Modaks.

Team coconut all the way! Though impossible to give you just one recipe... ! It is a staple onboard in all its forms from milk to sugar, shredded, roasted etc... it is the base for a lot of my plant-based recipes that use caramel, and turns a curry into a creamy delight! The good bacteria in coconut yoghurt serves as a rising agent for cinnamon buns ...yum!
