Jellies and candies: Carrageenan is used as a coagulant in the production of jellies and soft candies, providing the desired gel structure. It can replace traditional agar, gelatin and pectin to produce jellies with good elasticity and no water separation. 2. Dairy products: In dairy products such as ice cream and yogurt, carrageenan can be used as a stabilizer and thickener to prevent separation of the milk components and increase the taste and stability of the product. 3. Meat products: In meat processing, carrageenan improves water retention, sliceability and texture, and enhances the structure and elasticity of meat products.
