Like a gas leak, complexity can be a silent killer of a business. Imagine this— You’re an owner considering two restaurant concepts. One has 12 items on the menu, the other has 6. You need to find a chef. It’s harder to find a chef that will be good at all 12 dishes. The kitchen will be much busier trying to get 12 different plates out. Your ingredient complexity doubled. Your ingredient cost probably went up. Needing to account for 12 different options means there will be more waste if both concepts have the same amount of customers. So why would you make that choice? For the same reason many small business owners do. You’re worried that 6 options won’t attract as many as 12. And from that fear flows all of this downstream complexity and the feeling of being stuck. Because you’re servicing an unsustainable amount of work relative to the amount of profit generated. You have to go to the 6-item menu concept. Focus on the best quality possible for all 6 dishes. Done in a way only you can deliver. When you get that right, you’ll have a line around the block—with an economic model that can sustain you and service that demand.

🚨 𝗦𝗰𝗮𝗹𝗮𝗯𝗶𝗹𝗶𝘁𝘆 𝗜𝘀𝘀𝘂𝗲𝘀 𝗖𝗼𝘂𝗹𝗱 𝗞𝗶𝗹𝗹 𝗧𝗵𝗶𝘀 𝗥𝗲𝘀𝘁𝗮𝘂𝗿𝗮𝗻𝘁 🚨 Last night, my wife and I had an eye-opening experience at a busy restaurant. While we were excited about a delicious dinner, we ended up waiting over two hours, receiving our food in frustratingly slow increments, and eventually never got our main course. 😕 This experience got me thinking about the critical role of scalability in any business. Here's what I learned and observed: 📈 𝗖𝗮𝗽𝗮𝗰𝗶𝘁𝘆 𝘃𝘀. 𝗗𝗲𝗺𝗮𝗻𝗱 - The restaurant was bustling, but the kitchen couldn't keep up. - Like in any business, when demand exceeds capacity, service quality drops. 🛠 𝗥𝗲𝘀𝗼𝘂𝗿𝗰𝗲 𝗠𝗮𝗻𝗮𝗴𝗲𝗺𝗲𝗻𝘁 - One overwhelmed chef was a recipe for disaster. - Efficient resource allocation is key to handling increased demand. 🔗 𝗖𝗼𝗺𝗺𝘂𝗻𝗶𝗰𝗮𝘁𝗶𝗼𝗻 & 𝗖𝗼𝗼𝗿𝗱𝗶𝗻𝗮𝘁𝗶𝗼𝗻 - Poor coordination between kitchen and wait staff led to delays. - Seamless communication across departments is crucial for scalability. 💡 𝗖𝘂𝘀𝘁𝗼𝗺𝗲𝗿 𝗘𝘅𝗽𝗲𝗿𝗶𝗲𝗻𝗰𝗲 - Long waits and incomplete orders = unhappy customers. - Growing your business should never compromise the quality of service. 📅 𝗣𝗹𝗮𝗻𝗻𝗶𝗻𝗴 𝗳𝗼𝗿 𝗚𝗿𝗼𝘄𝘁𝗵 - The restaurant didn't anticipate or prepare for high demand. - Proactive planning and scaling operations smoothly are essential. I learned many, many things from my years in the restaurant industry that have made me a better business owner in a non-hospitality sector. One of them was the belief, widely held in the food industry, that the hardest leap to make if you're scaling a concept isn't the leap from 10 to 20, or from 50 to 100. The hardest leaps to make are the ones from 1 to 2 and from 2 to 3. If you can truly uncover what makes you unique, your secret sauce, the thing that keeps customers coming back again and again... ...and successfully execute that in a new setting... ...with new people... ...if you can do that 3 times...you can probably do it 30 or 300 times. And everybody in restaurants or any other low margin industry knows that's where the real money is. (Whether you actually want to, or have the capital to do it, are different issues.) The lesson? Maybe getting your business from where it is now to where you want it to be won't be this hard for as long as you think it will be. Maybe facing one giant "eat the frog" moment in year 2 or 5 or 7 will make your life a whole lot easier in year 10...15...20. Maybe you're thisclose and just need to dig a little deeper, not work a little longer.

💯 I talked to more than 100 restaurant/cafe owners, and this is what I got from it... 👨💼 Most of them started as chefs/waiters/bartenders. Some of them have been graduates of majors that are not related to F&B at all. They have been following their dreams ever since they stepped into the F&B industry. ♻ Sustainability is becoming a trend in this industry. Chefs are starting to care more about the environment. They try to grow some of their ingredients in-house, control their food waste, order supplies weekly rather than in bulk, and apply eco-friendly filters to their ingredients. 🤝 Establishing a friendly connection with the landlord is a must. While landlords can almost literally close your shop, on the other hand, they can help to create a work-friendly environment for your business. 💰 Most independent restaurants/cafes have struggled with food cost increases over the years. Suppliers keep increasing the food costs while HK F&B spending power is slowing down at the moment. 🥑 Well-known chefs mentioned that sometimes it is not about the quality of the ingredients they get from suppliers; it's mainly about how well chefs can use them. While cooking is an art, it is also a numbers game. So if chefs are exceptionally good at cooking, and they can use the leftovers wisely to reduce food waste at the same time, success is inevitable! Why do you need a website? It shows you're serious about your business. You're willing to go further than your competitors. A website may not seem like much. But it’s that small step towards being better. Think about it: scrolling through options, which would you choose? The restaurant with a full menu online? Or the one with nothing? It’s not just about the website. It’s about showing you care enough to go the extra mile. No, it’s not make or break. But what if it is? That small step might be the difference. Now, ask yourself: which one do you want to be? The one that takes the step, or the one that stands still?
