Asparagus Wrapped in Seaweed with Tofu and Lemon Crumbs
With summer fast approaching here is the perfect seasonal treat -Today's #meatlessmonday recipe , Asparagus Wrapped in Seaweed with Tofu and Lemon Crumbs
Serves 4-6
1 bunch asparagus
100 gr. peeled almonds
200 gr. tofu
2 Tbs. soy sauce
1 Nori leaf,cut into thin slices
juice from 1 lemon
1/4 cup olive oil
3 Tbs. whole tahini paste
1 cup radish sprouts
1 liter water
Directions
Steam asparagus in bamboo steamer for exactly 3 minutes or blanch in boiling water. Roast almonds in a hot skillet with a drizzle of olive oil and salt, or in a food hydrator at 41°c for 5 hours. Dice tofu and marinate in soy sauce for 10 minutes. Place asparagus on a serving dish. Wrap each asparagus sprig with a slice of Nori. Arrange tofu cubes on top of asparagus and dress with lemon juice and olive oil. Sprinkle with almonds, and drizzle with tahini. Garnish with radish sprouts. Serve immediately
