Pumpkin Soup
EAT: Pumpkin Soup | A Simple Autumn Recipe
Ingredients:
1 medium-sized pumpkin (about 1.5-2 Kg)
1 onion, chopped
2 cloves of garlic, minced
1 carrot, chopped
1 celery stalk, chopped
4 cups vegetable broth
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Salt and pepper to taste
2 tablespoons olive oil
Optional toppings: roasted pumpkin seeds, sour cream, or croutons
Instructions:
1. Cut pumpkin in half, remove the seeds and stringy pulp, and then cut it into chunks (you can leave the skin on).
2. In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables start to soften.
3. Add the pumpkin chunks to the pot, along with the cinnamon and nutmeg. Stir everything together and let it cook for another 2-3 minutes.
4. Pour in the vegetable broth, making sure it covers all the vegetables. Bring to a boil.
5. Reduce the heat, cover the pot, and let it simmer for about 20-25 minutes, or until the pumpkin is tender and easily mashed with a fork.
6. Puree mixture in blender until smooth.
7. Return the soup to the pot, add salt and pepper & reheat if needed.
8. Serve the pumpkin soup hot, garnished with your choice of toppings like roasted pumpkin seeds, sour cream, or croutons.

READ: Lessons in Chemistry by Bonnie Garmus. The novel surrounds Elizabeth Zott, a chemist and not your average woman. But it’s the early 1960s and her all-male team at Hastings Research Institute takes a very unscientific view of equality. Except for one: Calvin Evans; the lonely, brilliant, Nobel–prize nominated grudge-holder who falls in love with—of all things—her mind. True chemistry results.
But like science, life is unpredictable. Which is why a few years later Elizabeth Zott finds herself not only a single mother, but the reluctant star of America’s most beloved cooking show Supper at Six. Elizabeth’s unusual approach to cooking proves revolutionary. But as her following grows, not everyone is happy. Because as it turns out, Elizabeth Zott isn’t just teaching women to cook. She’s daring them to change the status quo.
