This authentic Mexican salsa has a terrific flavor. Use it on steak, chicken or Vegan street-style tacos.
It can also be used in a variety of ways including as a condiment for anything that needs a little extra spice or combine it, equal-parts, with any dressing of choice to top a salad.
After a lifetime of trying to recreate a specific hot sauce I had in Mexico at a street taco vendor, my best efforts have created dozens of terrific tasting hot sauces, just not the one I had and still remember.
My failed attempts alone at recreating the allusive street vendor recipe, could fill up two or three cook books of original hot sauce recipes.
I create all recipes using only fresh ingredients from the produce aisle or farmers market vs seasonings, frozen, dried or canned ingredients, when I can. Taste will vary if ingredients aren't fresh and cut/prepared by you.
Remember to wash all ingredients thoroughly by first soaking them in cold water, then scrub, rinse and set aside to dry in a colander. Greens especially always need to be thoroughly washed and refridgerated. Rule Number 1 - If its a green veggie always refrigerate and always do a thorough cleaning
Hot Sauce Recipe
1 bushel of cilantro (handful)
1/2 white onion
3 jalapeños
3 red peppers (looks like a red jalapeño)
1 small piece of garlic about the size of the top of your index finger
1/2 tbsp salt
1 tbsp black pepper
1 tbsp ground cumin
3 tomatillos
How to Prepare:
Step 1 (5 minutes)
Combine the tomatillos, cilantro, garlic, cumin, salt and pepper in a blender with 1/2 cup water. Blend until its all a liquid consistency then pour it into a pot. Put the pot on the stove top and bring it to a boil then turn down the heat immediately to medium-low setting for another minute, remove and combine with step 2 ingredients below.
Step 2 (5 minutes)
While waiting for the pot to boil put remaining ingredients in the food processor and process to your own desired size of shredded ingredients. You can combine to make a pico de gallo sauce if you want larger shreds or shred into tiny pieces for hot sauce.
Lazy/Busy Chef Cheat Tip - (saves 5 minutes)
If you don't have the time, patience or simply don't care: Just put all ingredients into the blender and blend until liquefied then do step 1 above only.
