Erythritol: The Sweet Life
Erythritol or E968 is a kind of artificial sweetener known as a four-carbon sugar alcohol (though, it’s not sugar or alcohol in how we typically think of those words). It was discovered in 1848 by Scottish chemist John Stenhouse and was later commercialised as a sugar alcohol in the 1090s in Japan. Erythritol is added to the list of many sugar substitutes that are sold as “natural” alternatives to sugar, such as stevia and monk fruit sweeteners.
Erythritol is a white crystallised powder that is about 70% as sweet as sugar. It is stable at high temperatures and in a wide pH range and provides a slight cooling effect when dissolved in the mouth. Erythritol can be used in a wide range of foods such as cookies, candy bars and brownies to reduce sugar or it can be simply used as a sweetener or table sugar substitute for your morning tea or coffee. It can also be found in sugar-free/reduced-sugar chewing gums, candies, chocolates, beverages and baked goods.
