Barberry (Berberis) is a plant from the Berberidaceae family, thriving mostly in semi-arid and mountainous regions. It is a small shrub that produces bright red berries, which ripen in autumn. These berries are used in both culinary and pharmaceutical applications, either fresh or dried. Originally cultivated in Central Asia and Iran, barberry has gradually spread to other regions worldwide.
Global and Iranian Barberry Cultivation Areas
Barberry thrives in semi-arid and foothill areas around the world. Iran, particularly South Khorasan Province (such as Qaen and Birjand), is the world's leading producer of barberry, accounting for about 98% of global production. Outside of Iran, countries like Afghanistan and Turkey also cultivate barberry, though their production is minimal.
South Khorasan holds the top rank in barberry cultivation in Iran, with 98% of the country's barberry cultivation area located in this province. The five main counties—Qaen, Zirkuh, Darmian, Sarbisheh, and Birjand—boast the largest cultivation areas. Collectively, over 19,485 hectares are devoted to barberry farming in this region, which is often referred to as the "Red Ruby of the Desert." Of this, 512 hectares are dry-farmed, yielding an average of over 100,000 tons of barberry annually.
Harvest season in South Khorasan is from October to November, with farmers beginning the harvest in mid-September. Fresh barberries are then processed and enter the market as dried products, typically between 1 to 6 months after harvest.
Types of Barberry and Their Differences
There is often confusion regarding the different types of barberries, as many believe that they come from different plants like various types of pistachios or dates. However, all barberries come from the same plant species. The different varieties result from distinct processing methods post-harvest.
In Iran, two main types of barberries are produced:
1. Seeded Barberry (B. integerrima): Known for its small seeds, this type is mainly used in medicinal applications and sometimes in cooking.
2. Seedless Barberry (B. vulgaris): This type lacks seeds and is primarily used in culinary applications. Two common varieties of seedless barberry are Puffy Barberry and Anari Barberry. Puffy barberry is of higher quality, while Anari barberry, due to a different processing method, is more affordable.
This type is harvested early in the season, around October, by removing the berries from the branches and spreading them out in the sun to dry. During this process, the berries are occasionally turned to prevent spoilage. After drying, the berries are cleaned of leaves using natural or artificial wind. The final product is stored in cardboard boxes in cool, shaded areas until further processing.
This variety takes longer to produce, with the product typically entering the market 3 to 6 months after the initial harvest. The berries are harvested with the branches intact and hung in large, ventilated halls to dry. This slow drying process, without exposure to direct sunlight, helps the berries retain their bright red color. After drying, the berries go through the same cleaning and sorting process as Anari barberries.
