Primary difference between Buffalo milk and cow milk is S.N.F: Fat ratio, total milk solids and natural water content of milk when it comes out from the teats of dairy animals as under:
Standard buffalo milk= S.N.F.: Fat ratio 8.84/6.50=1.36
Total milk solids=6.50+8.84 =15.34 Kg.
Natural water content= (100-15.34) =84.66 Kg.
C.L.R= 29.00 (bench marked composition)
Standard cow milk= S.N.F.: Fat ratio 8.50/3.50=2.4285714
Total milk solids= 3.50+8.50= =12.00 Kg.
Water content= (100-12.00) =88 Kg.
C.L.R= 30 (bench marked composition)
Now if we mix natural buffalo whole milk with cow whole milk in any proportion C.L.R. of mixed milk would remain between 29.00 and 30.00. unfortunately commercial /cooperative dairy plants in India accept diluted/ manipulated milk without checking C.L.R of raw mixed milk for each -3- and every milk purchase transaction starting from milk producer up to receipt of milk on dairy dock of milk plants. Lack of transparency and accountability in the value chain and use of unauthentic unpatented ½, 1/3rd empirical formulae for purchasing cow milk without checking C.L.R. of milk is responsible for menace of manipulation by dilution and hidden loss of billions of rupees to ethical dairy business entrepreneurs.
