Chef Moiles wears many hats – chef, entrepreneur, humanitarian – and along with Chef de Cuisine Josh Holt, has devised a menu driven by fresh, seasonal produce and local sources.
The menu at Veladora takes advantage of local and classical preparations, like its Grilled Mediterranean Octopus with heirloom potato, membrillo, and chili citrus vinaigrette as one of its meal starters. The savory main courses include their Short Rib Papardelle with red beet, foraged mushroom, whipped mascarpone, and black pepper. An extensive wine and beer menu offers some interesting pairings for the meal, which can be completed by a selection from their Sweets menu that lists scrumptious end-of-meal delights like their Warm Caramelized Apple Crisp with Vanilla Ice Cream, Caramel, and Brown Sugar Streusel. Dessert wines, aged liquor, “Night Caps” and classic choices of Cognac, Brandy, and Armagnac are among the potables offered at this atmospheric southwestern restaurant with a Mediterranean attitude.
