Executive Chef Coogan started part-time at Murray’s Cheese Shop on Bleecker Street, eventually becoming its manager. He graduated from the French Culinary Institute, worked with Chef Daniel Humm and Chef Dan Kluger, eventually becoming a part of the opening team for ABC Kitchen. As the chef de cuisine for ABC Cocina, his Mexican, Spanish, and Argentinian influenced tapas-style menu with a New American flair earned ABC the title of “Best New Restaurant” from the James Beard Foundation.
Of the to ABC restaurants, Cocina is the more casual. Its dinner menu includes a raw bar that boasts fresh seafood items like king crab legs with paprika and mustard sauce, and categories with delightful names: “table snacks” (warm marinated olives, poblano, mint pesto, e.g.), “light & bright” where you find salads, soups, and seafood (for instance, tuna tartare with chipotle aioli, chili, and chives), “golden & crispy” (with yummy offerings like peekytoe crab fritters with chipotle aioli), “masa & tortillas” that include sweet corn empanadas with lime creme fraiche, “grilled & roasted” where you’ll discover beef tenderloin “burnt ends” with Chimichurri, and “rice” (try some summer vegetables, brown rice, and salsa verde). All of the items are subject to change according to the season and the availability of the freshest, locally-sourced ingredients.
