Say Cheese

To celebrate National cheese lovers day on the 20th January, I thought I would share my visit to the stunning La Trappe cheese factory this week.

The cheese is produced by the Nuns ( Sisters of the Abbaye d`Echourgnac , Notre Dame de Bonne Esperance ) where the sisters soak the cheese in a local speciality nut liquor before maturing in their caves.

They produce up to 130 tonnes of cheese per annum from their small Abbey and not only is the cheese good to eat, I personally feel that it really comes into its own when lightly melted emitting deep nutty aromas and intense flavours of hazelnut nut and creamy butter. The cheese has a long tradition at the Abbey and may the sisters continue to produce such a gastronomic delight for all to enjoy.
