Summertime Citrus-Herb Grilled Chicken
Ingredients:
4 boneless, skinless chicken breasts
1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lemon juice
1/4 cup freshly squeezed lime juice
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon honey (optional for sweetness)
1 tablespoon chopped fresh rosemary (or 1 teaspoon dried rosemary)
1 tablespoon chopped fresh thyme (or 1 teaspoon dried thyme)
Salt and pepper to taste
Orange, lemon, and lime slices for garnish (optional)
Instructions:
Prepare the Marinade:
In a bowl, whisk together the orange juice, lemon juice, lime juice, olive oil, minced garlic, honey (if using), rosemary, thyme, salt, and pepper.
Marinate the Chicken:
Place the chicken breasts in a shallow dish or a resealable plastic bag.
Pour the marinade over the chicken, ensuring each piece is well-coated.
Seal the dish or bag and refrigerate for at least 30 minutes, or up to 4 hours for stronger flavor.
Preheat the Grill:
Heat your grill to medium-high heat.
Grill the Chicken:
Remove the chicken from the marinade, letting excess drip off.
Place the chicken on the hot grill and cook for 5-7 minutes on each side, or until the chicken is fully cooked (reaching an internal temperature of 165°F/74°C).
Rest and Serve:
Once cooked, transfer the chicken to a plate and let it rest for a few minutes. This allows the juices to redistribute, keeping the chicken moist.
Serve the grilled chicken with additional fresh herb sprigs and citrus slices as garnish, if desired.
