“An unbelievably cool day cooking over fire with @tbone_chops

Seriously interesting, inspiring and thought-provoking day - the biggest takeaway from the day was about the provenance of charcoal, something which I shamefully had not given much thought or consideration to before

.One of Chris’s many side hustles is @whittleandflamecharcoal who are paving the way for change in the charcoal industry

Absolutely fascinating stuff and real food for thought

We cooked:

  • Sourdough nettle wild farmed flatbreads with brown butter zaatar
  • Cured and hot smoked Test trout with caper butter sauce
  • Hung pork chop with dirty roasted squash
  • Fire-roasted apples with whisky caramel sauce and white chocolate crumb

We were spoilt for choice with a selection of fire sources, ranging from Gozney (for the flatbreads and apples), Weber (hot smoked the trout and flashed the pork), Ofyr (rendered the pork chops) and Ox Grill (incredibly cool contraption) - culminating in an absolute feast
