For my first meal back in Beijing, I went to Pu Yun Yunnan Cuisine. Jasmine Fish Tofu: Chicken tofu is common, but fish tofu is a first. It's smooth and soft, and the preparation process tests the chef's skills. The soup is clear and flavorful. Jasmine flowers from Yuanjiang, Yunnan, add a light floral fragrance to the soup. Yunnan Duck: After kneading, marinating, and roasting, the duck is golden brown, with crispy skin and tender meat. It's stuffed with Yunnan mushrooms, which absorb the duck's aroma, making it even more fragrant than meat. Before serving, it's cooked with baijiu for a full ceremonial experience. Chuanxiong Lamb: A combination of food and medicine. The two ingredients are cooked together to warm and dispel cold. After heating with hot oil, chili peppers are added for flavor, and the oil is poured over the lamb, making it tender, fresh, and smooth.
