The 5-star Library Collection Noble Late Harvest 2018 will be released in 2025, exclusively for our Society members. We are excited to introduce the Reserve Cabernet Sauvignon 2015, a 5-star-worthy wine crafted from a select block chosen by our cellarmaster and kept aside in the cellar to produce something breathtaking. Waterford Estate’s white wine journey began long before the estate itself came to be, with the previous owners of the land planted Cabernet Sauvignon, Sauvignon blanc and Chardonnay vineyards, laying the foundation for us to understand our terroir. With the Stellenbosch climate favouring Cabernet Sauvignon we decided in 2019 to remove the surviving Sauvignon blanc vineyard, letting the ground lie fallow for three years before replanting it to Shiraz and Cabernet Sauvignon vineyards. Many know Cabernet Sauvignon as a robust wine for ageing, but its origins lead the wine to a more refreshing place than most imagine. Cabernet Sauvignon originated in Bordeaux during the 1600s as an accidental cross between Cabernet Franc and Sauvignon blanc leaving Cabernet Sauvignon with a refreshing acidity and expressive fruit notes. The knowledge, earned in our Library Collection is grounded in experimentation - creating wines such as the Library Collection BW (Bordeaux white) and working with Elgin-grown Riesling and even Grenache blanc - has taught us valuable lessons about terroir and how we can craft wines with the expression of the Helderberg Mountain. This leads us to the old Sauvignon Blanc vineyard, with hard-earned knowledge through experimentation we were able to craft a wine that honours our historic terroir. The Estate Sauvignon Blanc 2014 standing at ten years old the wine still showcases a refreshing body with vibrant yet mature fruit characteristics showing us all that even Sauvignon blanc can age gracefully if crafted with care. The birth of new life coupled with the warmth of the sun's rays of spring has us excited for what summer has to bring! Our resident geese have grown their numbers, and the hatchlings are now running wild learning about the world around them.
