Creamy, silky and ultra delicious, cauliflower cheese is one of the best bits about a Sunday roast, and James Martin's recipe does not disappoint. The Saturday Morning TV chef shared his iconic recipe on the popular ITV show, making both the crew and audiences drool.
As with most cauliflower cheese recipes, James makes a white sauce using flour, milk and butter before adding in grated cheese. But unlike others, he add a few extra flavours including mustard, onion, bay leaf and clove to elevate the humble dish to another level.
He also uses a very simple ingredient to bulk it out and make it even more luxurious. He adds chunks of brioche bread (normal bread also works well) to the cauliflower to add extra texture and comfort to every bite.

Laura from SurreyLive gave his recipe a go, and described it as the best cauliflower cheese she had ever eaten. The addition of bread made it superior, plus added soft and crunchy bits to the dish.
Laura used dairy free cheese and soya milk to make it vegan friendly, and it worked a treat. She also used basic sliced bread instead of brioche and still achieved the same wow-factor results.

Cauliflower cheese recipe (serves 6)
Ingredients
- 1 cauliflower, cut into florets
- Olive oil
- For the sauce
- 1ltr full fat milk
- ½ onion
- 1 bay leaf
- 1 clove
- 100g butter
- 50g plain flour
- 400g grated cheddar cheese
- 1 tbsp Dijon mustard
- 200g brioche, cubed
- Mozzarella, for the top
Method
- Preheat your oven to 200C/gas mark 6.
- Put the cauliflower onto a roasting tray and drizzle in olive oil. Season, then roast for 10 minutes.
- Warm the milk in a pan (or microwave). Meanwhile, stud the onion with the bay leaf and clove and then add to the milk to infuse.
- Melt the butter in a separate pan, then whisk in the flour. Add the infused milk gradually, removing the onion.
- Add half of the cheese to the sauce then take off the heat and add the mustard. Season.
- In a frying pan, fry chinks of bread in butter until crisp.
- When the cauliflower is roasted, pop it in an ovenproof dish and mix with the crispy brioche. Pour the sauce over and top with the rest of the cheddar and tear over the mozzarella cheese. Pop under the grill for two minutes.
