That’s a wrap! 🍄 Last week, two of our major Soil to Soul projects came to a close, including the FoodLab 2024. For nearly a month, ten talented young chefs immersed themselves in learning, experimenting, and crafting innovative recipes alongside expert producers and chefs, gaining invaluable experience in the process. These fresh creations were then showcased to the public at a pop-up restaurant in the beautiful setting of dieCuisine in Zürich Altstetten, with interiors designed by the TASTELAB and Fabian Bircher, creating a truly memorable ambiance. We also hosted a series of public workshops on topics like mushroom cultivation, nose-to-tail cooking, the rich history of legumes, truffle seminars, and more, inviting participants to deepen their understanding of sustainable and creative food practices.
