⚠️ El jamón ibérico es uno de los productos más valorados de la gastronomía española… pero también uno de los más afectados por el fraude. Existen garantías para el consumidor, que puede identificar la calidad por los precintos, etiquetas y sellos de certificación. Pero no siempre es suficiente, ya que a menudo el fraude está precisamente en un etiquetado impreciso, o incluso falso. 🔎 La clave está en el control desde el origen. Garantizar la autenticidad del jamón ibérico pasa por supervisar la calidad de los perniles en cada fase de producción. Y aquí es donde la tecnología NIR juega un papel fundamental. De forma rápida y precisa, sin destruir ni alterar muestras, permite analizar el perfil de ácidos grasos del jamón, que aporta información sobre la alimentación del animal, y detectar fraudes de este tipo.
