Cargill is advancing FoodTech with innovations like 3D printing and mycoprotein fermentation to solve taste and texture challenges in alternative proteins. By partnering with companies like ENOUGH and FoodTech 500 alum COCUUS, it is driving progress in creating whole-muscle analogs at price parity with meat, which Megan Swartz, Cargill’s R&D manager for alternative protein, calls a “game changer.” While early plant-based products left consumers unimpressed, advancements in flavor systems and protein combinations have greatly improved quality. Swartz is optimistic about the category’s growth, fueled by rising global protein demand and ongoing innovation. Emerging trends, like “putting the plant back in plant-based,” are reshaping the market with minimally processed products. 🥩 La consejera de Universidad, Innovación y Transformación Digital, Patricia Fanlo Mateo, ha visitado esta mañana la sede de COCUUS, empresa biotecnológica dedicada a proporcionar tecnología para la fabricación de nuevos alimentos. 🔬 La consejera ha puesto a la compañía como ejemplo de innovación en Navarra. “Cocuus es un referente en la transformación de la industria alimentaria, ofreciendo a sus clientes soluciones innovadoras y personalizadas en un sector como el agroalimentario, que tiene un gran potencial en nuestra comunidad”, ha señalado. 🤝 Asimismo, Fanlo ha destacado “la importancia de la colaboración del Gobierno de Navarra con estas empresas para fomentar que Navarra siga siendo una región puntera en #innovación”.
