A digital sketch of the upcoming (back) bar design for CTZN project in San Diego, where we've reimagined the concept of an island bar to create not just a functional space, but a true conversation piece. At Studio Numen and Cocktail Professor, we believe in crafting luxury hospitality spaces that invite guests to connect and tell unforgettable stories. Our island bar invites guests to interact with bartenders and experience the craftsmanship behind every drink. The bar is functional, allowing bartenders to access bottles from all sides, and serves as a stunning focal point. We use the lighting as the silent storyteller in the bar design, shaping the narrative of the venue from dawn to dusk. On feature in the island bar is a bottle-stairs that has spirits displayed spiralled around it, each step illuminated with LED lights illuminating the craft spirit bottles, turning them into a beautiful art piece and creating a mesmerizing visual effect. Positioned at the heart of the bar, this ‘art’ serves as a conversation starter for guests and bartenders alike. Underneath the stairs, we've incorporated storage for our exquisite craft glassware, which is also lit up to let them shine and sparkle. OFF THE WALL: BREAKING BOUNDARIES IN CRAFT COCKTAILS. “Off the wall”, a phrase used to describe something unconventional or unexpected, a mantra for those pushing the boundaries of flavor, presentation, and experience. Cocktail culture has always had its classics: the Old Fashioned, the Negroni, the Manhattan. But today’s craft cocktail movement thrives on the unexpected. Fat-washed spirits, acid corrected juices, savoury infusions, and ingredients that, a decade ago, would have seemed out of place behind the bar. The cocktail menu will be a blend of surprising riffs on classics with a dose of nostalgia. A refined and refreshing cocktail list celebrating nature’s flavor and color palette with ingredients like kumquat, grilled blood peaches, caramelized figs, shiso leaves, clarified bell pepper, and other innovative ingredients. Eye-catching and delicious. Drawing inspiration from the wide range of flavors and colors you can find in nature, you will find natural art pieces in a glass. 'Caviar & Champagne' combines the rich notes of over-ripe bananas with the warm notes of the cachaca and a pinch of balsamico caviar. The Houston’s Botanical G&T features an enchanting green hue from the infusion of fresh herbs and is presented with a small bouquet of edible flowers and pea + cucumber cress for fresh aromas. The Strawberry + Fig riff on an aperitivo is presented with abstract shapes of these fruits made out of upcycled fruit leathers of figs with cardamom and strawberries with roses. Studio Numen is our sister design agency with who we crafted a botanical bar concept for Marriott Global Design Asia Pacific, designed to reconnect people with nature. We merged nature-inspired aesthetics with an adventurous, craft-driven bar atmosphere to spark curiosity and exploration. The bar itself feels like stepping into a lush, immersive garden. Cocktail stations are integrated with built-in plant wells, while the back bar serves as a stunning botanical laboratory where flavors are explored and enhanced, right in front of the guests. EXPLORING RASPBERRIES. Raspberries, with their vibrant color and balance of sweet-tart flavors, are one of our favorite fruits to use in craft cocktails. To truly maximize their potential behind the bar, we can borrow techniques from the kitchen, where extracting, preserving, and enhancing flavors is an art form. From muddling fresh raspberries to create a bright, fruit-forward drink, to making raspberry syrups, coulis, shrubs, or infusions that capture and intensify their flavor, the possibilities are endless. Techniques like maceration (soaking the fruit in sugar to draw out juices) or using raspberries as a source of acid in cocktails can unlock a new dimension of flavor. Raspberry juice, with its natural tartness, can be a creative substitute for traditional acids like lemon or lime juice, adding both balance and a subtle fruit note to drinks. Clarification methods can also transform raspberry syrups or juices into a crystal-clear ingredient, offering flavor without the pulp. One of our favorite classic cocktails where raspberries shine is the Clover Club. This pre-Prohibition drink combines raspberry syrup (or muddled raspberries), gin, lemon juice, and egg white for a silky texture, creating a harmonious blend of tart, sweet, and botanical notes. It’s a beautiful celebration of the fruit—elegant, timeless, and refreshing. For one of our bar consultancy projects at Coppersmith Bar, we reimagined this classic, blending raspberry with rhubarb for an added layer of complexity and finishing it with freshly grated lemon peel on top. The result is a Clover Club that’s familiar yet elevated, offering a perfect harmony of flavors. Originally created as a ‘give-away’ package for Porsche’s most loyal customers, this cocktail also served as an immersive experience at their event, telling the brand’s story in a unique and memorable way. Our approach translates Porsche’s brand values into a distinctive drinking experience. Champagne sparkles symbolize prestige, while quirky lavender bitters and tonka beans reflect creativity and a passion for detail. These ingredients create unexpectedly profound tasting notes in a non-alcoholic beverage. The agave and vinegar base adds a sporty touch. The cocktail is a striking fire-red, garnished with a red-yellow twist made from recycled lemon peel and watermelon fruit leather.
