FROM PELLETS TO PASTA 🍝 We continue to be amazed by the creative minds of the students at Lunds Tekniska Högskola. This time, a group of students in the Master Programme in Food Technology and Nutrition - Lund University developed Bavioli — a vegan and gluten-free ravioli with baobab in the dough! To make a baobab flour, they used the fiber rich byproducts from our production side stream. Very inspiring to see how production waste can be valorized and transformed into innovative, healthy and sustainable food products. Baobab + fermented seaweed = a perfect match 🤎 In collaboration with Eva Nordberg Karlsson, the team at the Department of Process and Life Science Engineering, and Biotech Heights, we have developed a spread with baobab and fermented seaweed that has the potential to reach the market in 2-3 years. Seaweed is a sustainable superfood that is likely to play a crucial part in the food of the future. By fermenting it, we can make it tastier and more accessible for the consumers. Fermented seaweed? Those who have tried it think it is much tastier than it sounds, and researchers are now hoping that acidified seaweed, rather than today’s dried version, will signify a major breakthrough for seaweed as a food source. Seaweed has the potential to be part of the future food supply. This marine plant contains proteins, vitamins, minerals, antioxidants and various types of unusual carbohydrates and stimulates the growth of beneficial lactic acid bacteria.
